13.25" Yanagiba with 7" 3 layer Hitachi Blue Paper #2 San-Mai blade. The handle is constructed from stabilized** blue tamarid, black redwood burl, and amboyna burl and capped with a brass and San-Mai bolster. This nimble blade is perfect for slicing. The variations in the San-Mai construction has the hard high carbon steel inner layer more exposed on the right side of the blade while being more subtly shown on the left. These differences give an unique and individual character to every San-Mai blade.


*San-Mai steel is generally made from three layers of steel with the outer two layers being made of mild steel to lend flexibilty with the inner layer being comprised of a extremely hard high carbon steel that is able to hold a very sharp edge.


**Stabilized wood is wood that has been processed to improve its stability and durability by impregnating it with a resin or polymer. Dye is often introduced adding beautiful coloration to supplement the natural grain and patterns.


For best edge retention use with a wooden, bamboo, or plastic cutting board. (Do not use on glass, ceramic, or stone surfaces). Use a kitchen steel for daily edge maintenance. Take care of your blade and it will serve you well for life.
